Finca Motta, Acevedo, Huila
Finca Motta sits at 1,700 metres in Acevedo, Huila, shaded by native trees across 4.6 hectares. Jefferson Adrián Motta grows Ombligón here, a rare variety that rewards patience. Only fully ripe cherries are handpicked, pulped with partial mucilage retention, and dried slowly on raised beds.
Ombligón is not a variety you encounter often. Its natural depth responds well to a yellow honey process: the sugars caramelise gradually, building sweetness and body without sacrificing clarity. The result is structured and clean, with a complexity that reveals itself slowly.
